Denver Omelet Sandwich

Ingredients:
Directions:
  1. Cook the Canadian bacon according to the package directions; set aside.
  2. Heat olive oil in a skillet and add the mushrooms, onion, and green pepper, and cook until vegetables are soft.
  3. In a small bowl, beat the eggs.
  4. Pour the beaten eggs into a skillet, then add the green pepper-onion-mushroom mix. Scramble and cook the mixture until the egg is fully cooked.
  5. To serve, place the egg scramble on the bottom half of an English muffin. Top with a slice of Canadian bacon and the other half of the English muffin.

Protein

The recommended protein intake during the second half of pregnancy and while breastfeeding is 71 grams daily.
